We went out recently for lunch and had a salad with a raspberry vinaigrette. Of course, knowing that it would be laden with sugar, I made sure to put it aside to confirm my suspicions. When the salad arrived at the table, I dipped my finger in the vinaigrette to give it a taste – and I found it unsurprisingly ridiculously sweet. The flavor was incredible.
Once home, we knew exactly what we needed to do. Recreate this vinaigrette without the carbohydrates and sugar – so we can use it on our own salads and give it that fantastic flavor. It will be fine if you have bitter salads – rocket, kale or radicchio work very well with that.
My suggestion is to store this in a mason jar in your refrigerator to keep it for a few weeks. If your dressing separates (the oil sometimes splits liquids), just shake the jar a few times before using it. The agitation process helps to emulsify again the oil and liquids so that you can use it as a salad dressing.
Makes 1 ½ cup Keto Raspberry Vinaigrette 5 minutes
- ½ cup white wine vinegar
- ½ cup extra virgin olive oil
- 35 drops liquid stevia
- ½ cup raspberries of gold
