This giant and seductive sub-cheeseburger is made with the easiest keto compatible dough and filled with cheeseburger meat, pickles and cheese. It's a delicious meal perfect for a brunch, a party or a casual dinner!

I used my favorite simplified fat head paste. All you need for the dough, it's two ingredients – that's all. There are no eggs and no cream cheese, just almond flour and grated mozzarella.

The dough is so versatile! In addition to the tasty toppings, you can use it for sweet recipes such as my Keto Pumpkin Cheesecake Breakfast Bags and my Hot Apple Pie Shortbread.

If you can not eat nuts, I've created a nut-free alternative using flax flour. The only drawback of this simplified Fat Head paste is that it can become soggy at the bottom. Be sure to use low moisture ingredients to avoid excess juice and soggy dough.

Ingredients (Makes 8 servings)

Cheeseburger filling:
  • 1 tablespoon of ghee or duck fat (15 ml)
  • 1 small yellow onion, diced (70 g / 2.5 oz)
  • 2 cloves of minced garlic
  • 400 g ground beef (14.1 oz)
  • 1 tablespoon Dijon mustard (15 g) you can make your own mustard
  • 2 tbsp. Sugar free ketchup or tomato paste (30 g / 1.1 oz) you can make your own ketchup
  • 1/2 sea ​​salt, or to taste
  • 1/4 ground black pepper, or to taste
  • 1/2 cup of sugar-free pickles in slices (78 g / 2.8 oz) you can make your own pickles
  • 4 slices of provolone, Monterey Jack or cheddar cheese (113 g / 4 oz)
  • 1 1/2 cup of grated mozzarella (170 g) – use low-moisture, partially skimmed mozzarella cheese; no fresh mozzarella.
  • 2/3 cup of almond flour (66 g / 2.3 oz)

Note: The recipe gives 8 entries or 4 regular meals.


  1. Heat a greased skillet with ghee over medium-high heat. Add the chopped onion and cook for 3 to 5 minutes until slightly browned and fragrant. Add the minced garlic and cook another minute.
  2. Add the ground beef and cook until it is golden and opaque.

  3. Add mustard and tomato paste, season with salt and pepper. Bake for about 5 minutes, stirring occasionally, then remove from heat.

  4. Preheat the oven to 180 ° C / 360 ° F (fan assisted). Place shredded mozzarella in a bowl and microwave for about 2 minutes, checking once or twice, or melt on the stove over low heat. Stir in the almond flour.

  6. Spread the dough between 2 sheets of greaseproof paper until it is big enough to wrap the filling (I've used a silicone mat and a silicone rolling pin).

  7. Using a drip spoon, add the cooked cheeseburger meat mixture to the center of the dough (do not add excess pan juice). Add the sliced ​​gherkins.

  8. Garnish with slices of cheese. Using a pizza cutter or sharp knife, cut slices about 2 cm (1 in.) On the longest sides of the dough. Do not cut until filling, but just in about 1/2 inch (1 cm) of the filling.
  9. Fold diagonally all the dough strips over the filling, alternating from one side to the other and stretching the dough as needed.

  10. Place in the oven and cook for 18-20 minutes or until the top is golden brown.

  11. Remove from the oven and allow to cool for 5 minutes before slicing. Eat immediately while it is still hot. To keep, refrigerate up to 4 days. Warm up before serving.
