EAGLE MOUNTAIN – Many people worry that fat consumption will also make you fat. However, a man from Utah has proven the opposite.
Dave Anderson, from Eagle Mountain, was standing in front of his stove cooking a New York steak seared in olive oil and butter.
Anderson is not afraid of fat. In fact, he said that he would probably eat between 50 and 60 grams of fat by this one meal.
"The calories of this meal will be very hearty and satisfying," he said.
Yet while Anderson was pounding the fat, he lost weight. He weighed 360 pounds. Her 6-year-old twins are not shy about it. After seeing a picture of his father two years ago, Bryce Anderson said with a chuckle, "I thought he looked pretty fat!" His twin sister, Emma, agreed.
Anderson's wife, Terisa Anderson, said he had gained weight during a stressful time in his life.
"All the stress of the twins, the death of her father, we sold our house at the time, all these changes were underway," she said. "He really grew and I was really worried about him."
But all that changed when he heard about Keto. Anderson got wind after seeing a friend posting on Facebook about the scheme.
"He was publishing pictures of the consumption of these huge stacks of bacon and eggs and I told him," I love bacon and eggs, "Anderson said.
Anderson said that he had tried all the diets of the book.
"I followed a high calorie and lean diet, stays at less than 1,000 calories … crazy things," he said. Anderson also gave a track to the Atkins diet, he said, "with 30 million other people."
However, Anderson said the Keto diet is different.
"By switching to a high-protein, low-protein, low-carbohydrate diet, I'm filling up quickly and I'm full for many hours," he said.
The body of Anderson relies on fat instead of sugar as a source of energy. He lost 100 pounds since the beginning of the plan in August 2016.
"The best part of this for me is that I feel better," Anderson said.
And Anderson said that he thinks more clearly. "One of the first things I noticed was mental clarity and mental focus … so I'm better at work."
Now, Anderson is able to play trains on the living room floor with his son.
"My knees were so beaten that I was kneeling on the ground, let alone crawling in pursuit," he said.
Anderson also enjoys playing with his children in their backyard. "I could not follow two 4-year-olds. They have thrown me to the ground, "he added.
Emily Lybbert, outpatient dietician at Intermountain Healthcare, said the plan has some benefits.
"Keto is great. It encourages limiting more processed foods that contain fewer nutrients, "she said.
However, Lybbert said that the diet is not sustainable. "It's not healthy to be so long in ketosis. It's just your backup system, "she said.
Lybbert said that it is dangerous to eliminate entire food groups.
"You cut the vitamins and minerals contained in it," she said. You will not get as much riboflavin and thiamin, or as much vitamin C as you might. "
Anderson would argue differently though. In response, he replied, "Yes, I've cut off foods that increase my insulin, which tells my body to store fat. Discover for yourself. There is so much information, so many published studies. "
Anderson said that it had changed his life and that he was feeling 20 years younger. His wife agrees to say, "He has more energy for the kids and for the list of honey."
After playing with the twins, Anderson threw Emma in the air while she was laughing and shouting. Anderson said that he felt better than ever, "being able to pick them up and throw them in the air and all that fun!"
